Ingredients
- Bread
- Potatoes (Boiled)
- Cucumbers
- Shredded cheese
- Mayonaise
- Mint Chutney
- Ching’s Schezwan Chutney
Preparation
- Cook 5 medium potatoes by boiling them or using the microwave method, then mash them.
- Apply a small amount of each of the 3 sauces – mayonnaise, mint chutney, and Schezwan chutney – onto each slice of bread.
3. Layer a generous amount of mashed potatoes onto a slice of bread, top with 4 cucumber slices per sandwich, and sprinkle some shredded cheese on top.
4. Grease the skillet with butter and cook each side until lightly browned, or use a sandwich maker.
5.Slice into triangles and enjoy promptly!
Boiling potatoes Method
please note the potatoes should be boiled till you can mash it with a fork. it should not be runny.
- Pressure cooker : pressure cook washed, peeled and cut in half potatoes in little water.
- Microwave: put washed peeled and cut in half potatoes in a microwave safe container with a little water and microwave on High for 5 minutes or until you are able to mash them with a fork.
Mint Chutney
You can either buy store bought Mint Chutney or make your own. please find link below for an easy recipe for mint chutney
